Red Chilli Sauce

Ingredients:

 

125 grams Red chili (Lal Mirchi), fresh
2 teaspoons Red chili pepper (Lal Mirchi)
2 Cloves (Lavang)
1 teaspoon Mustard seeds (Rai/Sarson) (tied in a muslin bag)
1/4 cup Vinegar (Sirka)
250 grams Tomatoes (Tamatar)
1 teaspoon Sugar (Cheeni)
2 teaspoons Salt (Namak)
1 teaspoon glacial acetic acid

 

How to make red chilli sauce:

  • Deseed the red chillies and grind.
  • Cook tomato pieces till tender and pass through a sieve.
  • Cook tomato pulp, ground red chillies, chilli powder, salt, sugar, cloves, vinegar and mustard seeds till thick.
  • Remove from the fire, take out muslin bag and cloves.
  • Mix glacial acetic acid. Pour in a bottle and cork tightly.
  • Keep it for one week before using.
  • Note: If the colour of the sauce does not look good, mix with it 1/2 teaspoon tomato red colour.

 

Stuffed Capsicum

Ingredients:

5-6 Capsicum (simlamirch)
2 boiled potatoes
2 tbsp boiled green peas
1 Onion finely chopped
1/4th tsp turmeric powder
Red chili powder to taste
1/4th tsp Garam masala
1/4th tsp Dry mango powder (amchur)
Salt To Taste
Oil/ghee for frying

 

Preparation:

  • Wash the capsicum and boil them whole till they are tender (not too much), drain water and keep aside to cool.
  • Mash the boiled potatoes.
  • Now in a pan heat 2-tbsp oil/ghee and add chopped onion and fry till it turns golden brown.
  • Now add all spices, mashed potatoes and peas and fry for few moments.
  • With a sharp knife cut the stem of the capsicum and take out seeds from the top gently and add the stuffing in it.
  • Now take oil/ghee in a kadhai and fry the stuffed capsicums on all sides.
  • Garnish the bharawan capsicum with grated paneer, chopped coriander leaves and thinly sliced rings of tomato. Serve hot.

Vegetable Biryani

Ingredients:

2 cups Basmati Rice
1 cup Mixed Vgetable (cauliflower, potato, carrot, french beans)
150 gms Green Peas
3 Finely Sliced Onion
2 Finely Sliced Green Chillies
Salt to taste
1 tsp Red Chilli Powder
2 tsp Cinnamon(dalchini), Caraway Seeds(zeera)
4 Cloves (laung)
1/2 tsp Black Pepper Powder
4 Tomato
1/2 cup Yogurt (curd)
4 tbsp Vegetable Oil
1/2 tsp Mustard Seeds
3 tbsp Dry Fruits (cashew nuts, raisin)

 

Method:

  • Wash the basmati rice well before cooking.Then take rice with 3-3/4 cup water and a little salt added to it and 2 tbsp of dry fruits.Cook it in pressure cooker or in a pan or microwave.
  • Cut all the vegetables into small thin pieces and fry each one of it separately in oil. Fry the green peas also.
  • Take 1 tblsp oil in a pan and add mustard seeds, green chilli, cinnamon and caraway seeds powder, cloves, black pepper powder and stir for about half minute. Then add onions and saute them for a minute ot till they get pink in color.
  • Add salt and red chilli powder and stir.
  • Add fine chopped tomatoes and fry till they are properly cooked.
  • Take the yogurt and make it fine by putting in a blender for just 2 rotations. Add this fine yogurt and stir well.Heat it for about 10 seconds.
  • Add all the fried vegetables.
  • Add the cooked rice and mix well with very light hands so that the rice grain doesn’t break. Cook for about 3 minutes.
  • Take this vegetable biryani out in a rice serving dish.
  • Garnish with dry fruits and green coriander leaves.
  • Serve the vegetable (veg ) biryani hot with raita and pickle.

Egg Paratha

Ingredients:

 

250 gms Whole Wheat Flour( Atta)
150 gms boiled Potatoes
1tsp Pomegranate seeds (Anardana) grinded into powder
1tsp Green Chilies (finely Chopped)
Salt and Red chili powder as per taste
Butter / Oil for frying

 

Method:

  • Make dough out of whole-wheat flour (atta) as you would do for any paratha/roti 15 minute before and cover it with wet muslin cloth and keep aside.
  • Peel and grate boiled potatoes (cool potatoes before using).
  • Mix grated potatoes, pomegranate seeds powder, chopped green chilies, salt and chili powder. Make small balls of the mixture.
  • Make a ball of dough slightly thicker than chapati and roll it a little.
  • Place Potato mixture on it and again make it into a ball. Seal the edges completely so that the stuffing does not come out.
  • Flatten these balls and roll like any other paratha. Pre-heat the griddle (tawa).
  • Turn egg parata and spread little oil or butter and shallow fry over low heat.
  • Turn it again and spread butter/oil on the other side.
  • Cook both sides till golden brown.
  • Serve egg paratha with chutney, curd or any vegetable.

Missi Roti

Ingredients:

 

2 cups Whole Wheat Flour (atta)
2 cups Gram Flour (Beasn)
1 tsp Cumin Seeds (jeera)
2 tbsp Dry fenugreek leaves (kasoori methi)
Red chili powder to taste
Salt to taste
A pinch of turmeric powder
2 tbsp oil
Water to knead

 

Method:

 

  • Mix Wheat flours gram flour, salt, chili powder, turmeric powder and mix well.
  • Make powder of fenugreek leaves and mix it to the flour.
  • Rub oil into the flour, slowly add water and make a soft dough and keep it covered with damp cloth for 30 minutes.
  • Knead well again the dough and make balls.
  • Roll into a slightly thick chapati than usual. Pre-heat the girdle (tawa) and cook the missi roti with or without oil.
  • Note: It can also be cooked in an oven or tandoor.

 

Bhel Puri

Ingredients:

1 cup Puffed Rice (Kurmura)
1/2 cup chopped Tomato (Tamatar)
1/2 cup chopped Onion (Pyaj)
1/4 cup chopped Coriander Leaves (Dhania Patta)
1/2 cup boiled and mashed Potato (Aloo)
4 chopped Green Chilli (Hari mirch)
1 tblsp chopped Ginger(Adrak)
1 tblsp Garam Masala
6 tblsp Tamarind (Imli) Chutney
6 tblsp Coriander Leaves (Dhania Patta) And Mint Chutney
1/2 cup Nimkis
1/2 cup Sev
1/2 cup Gol gappas
2 tblsp Lime or Lemon (Nimbu) Juice

 

Method:

  • Mix the puffed rice, tomatoes, onions.
  • Drain the water from the grated potatoes and mix that as well.
  • Mix all the ingredients under seasoning and add to this.
  • Lightly crush and add the nimkis and golgappas.
  • Add the sev and kaara pusa directly and mix well.
  • Finally garnish with coriander leaves and lemon juice.
  • Serve immediately..
