1 cup - boiled peanuts
2 - green capsicums, chopped into cubes
1 tsp - ginger finely chopped
3 - garlic flakes, finely chopped
1 - green chilli, sliced
¼ cup - spring onion greens, very finely chopped
1 tsp - soya sauce
1 tbsp - tomato sauce
1 tsp - mustard paste
1 tsp - chilli garlic sauce
1 tbsp - white vinegar
1 tbsp - cornflour
1 tbsp - oil
salt to taste

1. Heat oil, add ginger, garlic, stirfry for a few seconds.
2. Add capsicums, peanuts, drained, sautee till capsicum is soft and limp.
3. Mix all sauces together in a cup, add vinegar, salt, add to pan.
4. Mix and allow to simmer for 2-3 minutes.
5. Mix cornflour separately in ½ cup water, add to pan.
6. Stir continuously, till cornflour becomes transparent.
7. Simmer for 2-3 minutes, or till gravy thickens.
8. Serve hot and simmering, garnished with finely chopped spring onion greens.
9. Serve hot with warm garlic bread, multi grain bread slices or steamed rice.

Makes: 2-3 servings

1 cup - fresh boiled peanuts
1 cup - roasted skinned peanuts, crushed coarsely
2 tsp - green allpurpose chutney
2 tbsp - sweet tamarind chutney
1 - onion, finely chopped
1 - tomato, finely chopped
1 - small cucumber, finely chopped
1 - small green chilli, finely chopped
1 tbsp - coriander leaves finely chopped
½ cup - fine sev (farsan)
½ cup - thick hung curds
1 tbsp - fresh cream
½ tsp - crushed cumin
¾ pinches - chaat masala
¾ tsp - sugar, powdered
10 to 12 - canapes shells, deep fried and crisp
salt to taste

1. Fry shells as per instructions on packet, keep in airtight container.
2. Put onion, tomato, cucumber, boiled peanuts, in a large bowl.
3. Add both chutneys, salt, chaat masala, crushed nuts mix well, keep refrigerated till required.
4. Beat curds and cream till smooth.
5. Add cumin, sugar, salt, green chilli, keep refrigerated till required.

To Proceed Before Serving:

1. Put a teaspoonful of mixture into a canap shell.
2. Top with a dollop of curd mixture.
3. Garnish with sev and coriander.
4. Repeat for remaining shells and mixture.
5. Serve fresh and crunchy.

Making time: 30 minutes
Makes: 10-12 canapes
