Dhokla

This popular Gujarati recipe has become a regular feature in many Indian homes. Simple to make delicious to eat! All you need is 350gms of gram flour (Besan), 1cup of Curd, 1tsp of Green Chilies paste, 1tsp of Ginger paste, Salt to taste, 1tsp of Soda bi-carbonate, 1 of Lemon juice, 1/2 tsp of turmeric powder, 1tbsp of Oil, few Curry leaves, 1tsp of Mustard Seeds, Coriander leaves chopped, 2-3 green chilies. In a bowl add gram flour (besan), Curd and water and mix it well to make a smooth batter. Add salt to it and set it aside for at least 4 hours. Covered it with a lid. Now put the ginger and green chili paste to the batter. Also add turmeric powder and mix well. Keep cooker ready on gas. Grease a baking dish. Now in small bowl take a tsp. of soda bi-carbonate, 1tsp oil and lemon juice and mix well. Add this to the batter and mix well. Pour the batter into the greased pan and steam for 10-12 minutes or till done. Cool for sometime and cut into big cubes. Heat little oil in a small pan and add mustard seeds and curry leaves allow to splutter. Remove and pour it over dhoklas. Garnish the dhokla with coriander and slited green chilies.

Hey you no more have to go to a pizza parlor to eat the tempting pizza. Why spend those extra pounds ordering those expensive pizzas at home. Now you can serve this all time favorite Italian crunchy delight to your family and see them begging for more. Get 4 medium sized pizza bases. 200gms onions chopped, 200 gms tomatoes chopped, 125 gms chopped, 125 gms capsicum, 100 gms mushroom chopped, 20 gms pizza cheese, 3tbsp of tomato sauce, salt and black pepper powder to taste. Preheat the oven till you spread tomato sauce on each pizza base. For topping, mix all the chopped vegetables and seasoning. You can microwave the chopped vegetables in a bowl for few seconds. Spread the vegetables for topping on each pizza base which already has tomato sauce on it. Now sprinkle grated pizza cheese on the top of each pizza. Bake them and cut them in to pieces to eat.

Good Chinese Noodles

Here is a lip-smaking preparation of Chinese Noodles tossed with fresh vegetables. All you need is 150 gms of noodles, 4 cups of water, 4 tsp of oil, salt to taste, 2 onions sliced, 2 capsicum sliced, 100 gms cabbage shredded, 2 carrots shredded, 50 to 75 gms of beans chopped, 9 to 10 garlic flakes chopped, 2 tbsp of soya sauce, 1 tbsp tomato chilly sauce, 1 tbsp vinegar, a pinch of ajinomoto and black pepper to taste. Fist boil noodles till cooked in a pan. Add noodles to the water only when it starts boiling. Add some oil and salt to it. In another pan add all chopped vegetables and keep stirring them. Now add soya sauce, tomato chilly sauce, vinegar and ajinomoto to it and stir well. After this add the boiled noodles to the vegetables and stir it. You can also add baby corn, mushrooms or shredded chicken for a tasty variation.

So get ready to surprise everyone with a delicious chocolate walnut cake. All you need it 1 cup of flour, 2 eggs, 2 tbsp of cocoa powder, ¾ cup of butter, ¾ cup of sugar, 1 tsp of baking powder, ¼ cup of milk and ½ cup of chopped walnuts. Preheat you oven on the degrees prescribed for baking cake. As all ovens will have different settings. Now grease the tin in which you will be baking the cake with oil or butter. Beat Butter, sugar and egg till fluffy and creamy in a bowl. Slowly mix the flour mixture and beaten eggs and add milk to make smooth batter. You can now ad chopped walnuts to it. Pour the cake batter into the greased cake tin and bake it in the oven. When baked allow it to cool and serve.

To make that authentic Chicken Biryani is made with a lot of patience and effort and if you are ready to invest this the all you need to make that mouth watering Chicken Biryani is, 2 cups of good Basmati Rice, half kg of Chicken Pieces, 1/2 cup of Milk, 1 cup of curd, 3 sliced onion, 1 tsp of Ginger Paste, 1/2 tsp of Garlic Paste, 1 tsp of Green chilly Paste, 1/2 cup of Tomato Puree, 2 tsp of Garam Masala, about 2 tsp of Red Chilly Powder, 1 tsp of Turmeric Powder, 1 tsp of Roasted cumin powder, 2 tsp of Red Chilly Powder, , a pinch of Saffron, 1 tsp of Coriander Powder, 2 tbsp of Green Coriander Leaves, Salt to taste and 100 grams of Oil. Marinate the chicken with the mixture of tomato puree, yogurt, ginger garlic paste, green chilly paste, red chilly powder, roasted cumin powder, garam masala, coriander powder, turmeric powder and salt and stir well. Keep this aside for 3-4 hours. Now heat the oil in a pan and fry the onions until golden brown. Add the marinated chicken to this and cook for 10 minutes. Add 4 cups of water to the rice. Mix saffron in milk and add to it. Lastly add the chicken pieces and cook in a pressure cooker with the rice. Mix gently and garnish with green coriander leaves.

Butter chicken is one of the most sought after dish of North Indian cuisine. To make delicious Butter Chicken you need 150ml of yogurt, 1/2 tsp of chili powder, 1/4 tsp of cloves, 1/4 tsp of cinnamon, 1 tsp of garam masala, 1 tsp of ginger paste, 1 tsp of garlic paste, 400g of tomatoes, salt to taste, 1kg chicken, 75g of butter, 1 tbsp refined oil, 2 medium sized onions, slice them, some fresh coriander and 4 tbsp of cream. First place the yogurt, all the dry spices, ginger, garlic, tomatoes and salt in a bowl to mix and blend them thoroughly. Put the chicken into that bowl with the yogurt mixture. Keep it aside for some time. Melt the butter and the oil in a medium karahi or frying pan. Add the onions and fry for about 3 minutes. Add the chicken mixture and stir-fry for about 7 to 10 minutes. Now put the cream and stir in well. Bring to the boil. Now add some more butter and garnish with the coriander leave and serve.
